Unlike other cereals, in rice, the content of protein, fiber and sodium is quite small, thanks to this it is popular in medicine, especially in the treatment of obesity, cardiovascular diseases and others. It is rich in vegetable proteins, which in their composition are similar to buckwheat proteins. It contains a lot of useful and at the same time valuable substances - phosphorus, lecithin, fittin, vitamins of group B.
The advantage of rice flour is that it contains 2 times less fat compared to wheat flour. Thanks to its small amount, bakery products made of rice flour have a long expiration date. Also, rice groats contain a fairly large amount of starch (about 82%), which is easily absorbed by the human body, and very few fiber and disaccharides (about 0.5%).
