The plant is herbaceous, with a strongly branched creeping stem, strewn with dark green petiole leaves of oval-triangular shape, does not shoot at high temperatures. It differs from the usual spinach with a more fleshy, juicy and crisp, rich in biochemical composition: it contains protein, mineral salts, carotene, routine, vitamin C, oxalic acid, potassium, calcium, iron and iodine. It is used in children's and dietary nutrition. Young shoots are eaten along with the leaves in fresh, boiled, canned form, used for the preparation of vegetable puree, soups and various side dishes.
