• in ice cream sugar is often replaced by dextrose - it reduces the freezing temperature of ice cream and, thanks to this, the dessert structure becomes more pleasant. But, pay attention to the fact that you can’t replace sugar completely - only up to 30%. If you completely replace sugar, then the ice cream will melt too quickly and the taste will be worse.
